Strawberry Mint Soda
A sparkling drink for a sunlit table.
This is more refreshing than a bottled soda and takes only a few minutes. The strawberry base can be made ahead and chilled.
Ingredients
- 250 g strawberries, hulled
- 2 tablespoons caster sugar or honey
- 1 lemon, juiced
- 12 mint leaves, plus more to serve
- Ice
- 750 ml chilled sparkling water
Method
- Crush strawberries, sugar, lemon juice, and mint in a pitcher with a muddler or wooden spoon.
- Let the mixture stand for 5 minutes so the berries release their juices.
- Fill four glasses with ice and divide the strawberry mixture between them.
- Top slowly with sparkling water, stir once, and garnish with fresh mint.
Serve it with
Add a splash of elderflower cordial for a more floral drink.
